I made me some Apple Pie Muffins yesterday, to enjoy for suhoor... and I sure did enjoy it!! They are also good for potlucks, picnics, and children's lunch. I look forward to hearing from anyone who decides to make them.
Makes 16-18 muffins
Topping
1/2 cup (4oz/8 tblsp) packed brown sugar
1/3 cup (3oz/5 tblsp/85.2g) flour
1/4 cup (2oz/59ml) unsalted butter, melted
(optional) 1 teaspoon cinnamon
(optional) 1/3 cup (3oz/5tblsp/85.2g) oats
Muffins
1 1/2 cups (12oz/24 tblsp) packed brown sugar
2/3 cup (5oz/152ml) vegetable oil
1 egg
1 1/2 teaspoons vanilla essence
2 1/2 cups (20oz/568g) flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (8oz/237ml) buttermilk
2 cups (16oz) diced peeled firm tart apples
(optional) 1 teaspoon cinnamon
Topping:
:: In a small bowl toss together sugar, flour, butter, oats, and cinnamon until crumbly.
:: Set aside.
Muffins:
:: In a large bowl whisk together brown sugar, oil, egg, and vanilla, until smooth.
:: In a separate bowl, sift together flour, soda, cinnamon, and salt.
:: Stir oil mixture into flour mixture alternately with buttermilk.
:: Fold in apple, mixing just until combined.
:: Spoon into greased muffin cups filling 3/4 full.
:: Sprinkle topping over evenly.
:: Bake at 350°F (180°C) for 25 to 30 mins or until golden brown and tops spring back.

ReplyDeleteI am sooo happy you tried them out Zaynab :) and thank you for the feedback. I very much like that you used whole wheat flour (I like anything with whole wheat)..I think I shall try it your way, insha'Allah. And glad you hear the little man enjoyed them as well.
You can also substitute apple sauce for the oil.. which makes it even healthier.

I have purchased the ingredients for the muffins :) but I had a quick question before I made them on Saturday. Are granny smith apples okay to use? Also should I dice the apples really small or should I put them in the food processor? Sorry for the basic questions but I am really not the best baker.

Actually Granny Smith apples should work out perfect! (insha'Allah)
Dice the apples erm about half the size of a lego piece. (not to big, and not to small)
