This recipe is long over due...and since summer is close, I figured it might come in handy. I pretty much spend the whole summer eating bbq'd food, and this one is on the menu at least twice in a week.
Serves 5 (or just me..haha)
10 pieces of chicken
1 lemon - juiced
1 tsp black pepper
5 cloves garlic - minced
1" ginger root - minced
1 tsp red chili powder (or to taste)
1/2 tsp paprika
optional: sea salt to taste
Directions:
:: Wash chicken pieces, dry with paper towel, and cut two slits into them (so the marinade will go in).
:: Mix all ingredients together in shallow bowl and place chicken pieces in, coat thoroughly.
:: Allow to marinate in refrigerator for 2 hours at minimum (over night is better).
:: Before grilling add in clarified butter (or any oil you prefer).
:: Grill chicken on medium hot coals until browned (and juices run clear), turning and basting with any marinade that may be left in the bowl.
